The Leftover Club
Nov 29th, 2008 by Marilyn
Saturday, 1:36 pm. How’s it going with those leftovers?

While Josie and Greg watched KU beat Missouri, I stacked a few Turkey-Bacon-Cranberry-Swiss Clubs.

And now, we are down to only one enormous leg.

Perhaps Henry VIII will just come on over and finish things off?
If you wish to build your own, here’s the sedimentary diagram of the club:
* Toasted Potato Bread
* Mayonnaise
* Crispy Thick-Cut Pepper Bacon
* Fresh Spinach
* Baby Swiss Cheese
* Roast Turkey
* Cranberry-Cherry Balsamic Relish
* Toasted Potato Bread
(Yes, Potato Bread and no, I don’t think that carb can get any more white)

The past few years we’ve not done a roast turkey, so leftovers have been anything from turkey meatloaf to turkey lasagna to tapas to Chinese food. But I surely do remember when the leftovers would go on for days….
Rock Chalk Jayhawk! A KU victory and Thanksgiving leftovers fueled a seven-hour drive home. Now I’m home enjoying a slice of apple-cranberry pie with a dollop of ice cream. Life is good.
Not many leftovers here. My Thanksgiving was at my best friend’s grandma’s assisted living facility and while they had a pretty good buffet, I think the old ladies would’ve frowned on my stashing away seconds in my pockets. Second Thanksgiving, with my family, was yesterday and everything’s gone but half a pumpkin pie and a big pan of Dirt Dessert. That goes with me to the fire department tonight, so it’ll be gone in no time.
We had a 14 pound turkey and BARELY had enough white meat to cover the meal. We had 14 people for dinner and my Mom forgot to factor in the appetites of her 3 teenage grandsons. So, no sandwiches for us but we did manage to have some dark meat for soup on Friday.
Just looking at our first sandwich pictures give me cravings again.
The leg is enormous! Wow, can’t wait to see what you make with that!
Now, that’s my kind of sandwich after Turkey Day! Looks like the most satisfying lunch ever!
I wish I had one of those sandwiches right now. It would be good on your challah bread too.
As of last night, I believe leftovers quite literally started to come out of my ears.
That cranberry relish looks to die for! I’m filing it away right now.

“The Sandwich”. Oh my Lord, proof that God loves us. Manna from Heaven…it’s The Sandwich.
