It’s the Cheesiest

I am so in love with this Beemster cheese. 
So much that I gave it a golden cheese halo. It is a storybook wedge – amber and firm, curls beautifully and melts like a dream. Similar to Gouda but stronger-flavored, it’s good for snacking – it’s good for anything, and here’s how the delightful Beemster people describe it:
Beemster Classic is the perfect age for any kind of cheese connoisseur to enjoy. One can enjoy Classic on a lunch sandwich in grade school or with fine wines at a dinner party.”
One can also enjoy it by eating a whole wheel. Oh, the Dutch. The only flaw is the name…it’s like I’m hangin’ with the Beemster.
And…I am. I go through little cheese infatuations. In the honeymoon stage there are peeks in the fridge, afternoon love bites and long, curling slices. Then it’s marriage, and I’ll use it every day – in eggs, grilled cheese, in chicken on Tuesday. Finally, indigestion and the oversaturated breakup: Beemster, I’m just not that into you.
But right now, the Beemster is melting my heart. We’re going steady… 
…and every day is a Dutch treat.

That looks like it’d make a fine grilled cheese sandwich.
I’ll have to look for this. Though right now I’m very into the smoked Gouda, quite fond of Parrano, and my favorite bar none for snacking is Wensleydale with cranberries. (The blueberry version, however, just tastes weird to me. Stick with the cranberries.)
I love cheese – even more than chocolate. I have a bit of a “black diamond” obsession. Grab a chunk if you see it in the store…
Oh yeah, we’re all good friends with Black Diamond Cheddar – it makes a stellar grilled cheese, especially when dunked in tomato soup. Another favorite is “Heart of England,” a layered cheddar-and-stilton cheese so rich, so good that we frequently call it “Heart Attack of England.”
We discovered Black Diamond while shopping in Zabars…the Fiance insisted we buy it as he felt certain it was named after the Kiss song.

Never heard of Beemster cheese before but it looks good. I got some Fontiago cheese the other day from the deli counter at the grocery store. It’s a combination of Fontina and Asiago cheese. It’s really good on a sandwich. Brian (my deli guy) says it melts really well too.
